To get started, pick a recipe that highlights seasonal and locally sourced ingredients. For example, you could make a hearty lentil soup, a colorful vegetable stir-fry, or a protein-packed chickpea salad. If you’re new to plant-based cooking, start with simple swaps like using beans or tofu instead of meat, or almond milk instead of dairy. Focus on whole foods like vegetables, grains, legumes, nuts, and seeds to create a balanced and nutritious meal. Don’t forget to season generously with herbs and spices to bring out the flavors.

To provide proof of your completion, make sure you can provide your recipe, and you will need to take a picture of your ingredients before you begin cooking, take images of the cooking process, and then take another once you have plated your meal. After you are finished, you will upload your images and answer a few questions.
